@cast_iron_chris: Cleaning a griddle (or pan) is always easiest right after cooking but sometimes we want to sit and enjoy the meal, or in this case it got dark and late and so I gave it a quick once over and dealt with cleaning the next day. One of the simplest and effective ways to clean a griddle is by deglazing. I like to get my griddle around 400°F before adding room temp water. I don’t want the griddle ripping hot over 500° and I also don’t want to use cold water. If you don’t have a scraper you can use a bench scraper, or even a spackle knife. Repeat the water/scraping process as many times as needed until anything that was stuck on is removed. On my last deglaze I turned off all the burners. In this case, even after deglazing/scraping there were a few small spots that were still stuck in there. The chainmail scrubber makes easy work of this. (Chainmail scrubbers can be found on my website). Once the griddle is clean I oiled it with my Seasoning Compound. After it was evenly oiled, I took my ‘clean’ rag and removed the excess oil (this ensures the griddle isn’t going to be sticky the next day). Some people like to use paper towels and tongs to oil their griddle. I don’t like wasting paper towel and they tend to leave lint behind, and I find using tongs doesn’t work as efficiently as using your hands. If you’re worried about burning yourself, grab some fire gloves (and the burners are off at this point). Happy cooking!
