Make the Ice Cream Filling Whip the heavy cream until stiff peaks form. Gently fold in the sweetened condensed milk and Reese’s Peanut Butter Spread until combined. Fold in the slightly cooled melted chocolate, followed by the chopped Reese’s Peanut Butter Cups. Set the filling aside while you prepare the shells. 2. Make the Chocolate Shell Melt the chocolate with a small amount of coconut oil until smooth. Spoon the chocolate into each plastic cup and rotate the cup to coat the bottom and sides completely. Place the cups in the freezer until the chocolate is firm. Repeat with a second layer of chocolate to create a thicker shell. Freeze again until completely set. 3. Add the Reese’s Layer Melt the Reese’s Peanut Butter Chips with a small amount of coconut oil until smooth. Coat the inside of the hardened chocolate shell with one layer of the Reese’s peanut butter mixture. Return the cups to the freezer until the peanut butter layer is firm. 4. Fill the Cups Spoon or pipe the Reese’s ice cream filling into each prepared cup. Gently tap the cups against the counter to remove any large air pockets. Insert a popsicle stick into the center of each cup. Freeze overnight, or until completely solid. 5. Seal the Cups Once frozen solid, cover the exposed ice cream with another layer of melted chocolate to completely seal each cup. Return to the freezer until the chocolate is firm. 6. Unmold Briefly run warm water around the outside of the plastic cup to slightly loosen the shell. Gently pull the frozen Reese’s ice cream cup out using the popsicle stick. Keep frozen until ready to serve.
