🥧 Cozy Midwest Chicken Pot Pies (individual servings!) 🐔 Welcome to this series where I show you the most delicious and iconic dishes of American cuisine because I’m tired of people talking 🫘 about American dishes. 🐔 Iconic American dish of today: Chicken Pot pie 🥧 For the filling: • 1 ½ cup carrots, diced • ½ cup celery, diced • 1 small onion, chopped • 1 cup potatoes, peeled & diced • 2 garlic cloves • 5 tbsp unsalted butter • ⅓ cup all-purpose flour • 1 cup heavy cream • 2 ½ cups water o chicken broth • 1 lb (450 g) rotisserie chicken diced or shredded • ½ cup frozen peas • 2 tsp salt (or to your taste) • 1 tbs chicken powder *if using water, if using broth 1tsp* (or to your taste) • ½ tsp black pepper (or to your taste) • ½ tsp dried thyme (optional but traditional in the Midwest) • Sage • Rosemary • 1 egg for egg wash For the crust: • 2 prepared pie crusts (homemade or store-bought Steps: 1. Sauté veggies in butter for 3 minutes on medium heat. Add potatoes and sauté for 2-3 minutes.(all veggies will finish cooking in the oven) 2. Add flour → cook 1–2 min. 3. Pour cream & broth, simmer until thick. 4. Season + stir in chicken & peas. 5. Divide into ramekins, top with crust, cut slit. Egg wash the crust. 6. Bake 400°F 25 min or until golden & bubbly. 7.
