Small point is that it's not only that the kids didnt want to do it is that the parents often don't want their kids to take over. The restaurant work was a means to an end to get the kids to be successful. Also, there are kids now who are circling back to restaurants and learning the craft again because they're over the 9-5 grind and want to preserve their family legacy.

there used to be two chinese food joints, one run by Chinese and one by Bangladesh. the hatred i got from chinese when they saw me going to the Bangladesh one. im chinese and their food was better 😅

The buffets still hire them. There was a guy from China who broke down the system of hiring immigrants from home to establish their own businesses like non-official franchises. Basically staying at the bottom and learning the business to maybe open up their own buffet eventually.

My step dad is an Italian chef. He’s Mexican and got his green card for having exceptional skills. It’s the same with other Chinese restaurants. Mexican and other Latinos are hard working who are exploited now for their cheap labor
