🍑 Zesty Peach Barbecue Sauce | Peach Project no. 2 This one actually has a backstory. few weeks back, we were at a farmers market where I sampled peach barbecue sauce for the very first time—and it changed my life forever. 😂 I’d never had it before, but after that first taste, I knew if I ever found myself with a mountain of peaches, peach BBQ sauce was going on the roll call. Well… enter 25 pounds of peaches from The Peach Truck. 🍑 So for Peach Project number 2, I pulled out my Ball book and made their tested Zesty Peach Barbecue Sauce canning recipe. I did make one texture adjustment. The recipe calls for the ingredients to be finely chopped, and apparently my definition of finely was a little generous. 😂 Since I prefer a smoother barbecue sauce anyway, once everything was cooked and softened, I used my immersion blender to get the consistency I wanted. 🍑 Zesty Peach Barbecue Sauce Makes approximately eight 8-oz jars Ingredients: * 6 cups peeled, pitted & finely chopped peaches * 1 cup finely chopped, seeded red bell pepper * 1 cup finely chopped onion * 3 Tbsp finely chopped garlic * 1¼ cups honey * ¾ cup apple cider vinegar * 1 Tbsp Worcestershire sauce * 2 tsp hot pepper flakes * 2 tsp dry mustard * 2 tsp salt To make it: Combine all of the ingredients in a large stainless-steel pot and bring to a boil over medium-high heat. Reduce the heat and keep the mixture at a gentle boil, stirring frequently, until everything is tender and the sauce has reduced to approximately the consistency of a thin commercial barbecue sauce, about 25 minutes. For the smoother texture I wanted, I used an immersion blender once everything was thoroughly softened, then made sure the sauce was piping hot before filling my jars. Ladle into hot jars, leaving ½-inch headspace. Remove air bubbles, adjust the headspace if necessary, wipe the rims, and apply lids and bands. Process in a boiling-water canner for 15 minutes, adjusting for altitude as necessary. Turn off the heat, remove the lid, wait 5 minutes, then remove the jars and allow them to cool undisturbed. 📖 Based on a tested Ball canning recipe. When preserving food, always follow the original tested recipe and its processing and altitude instructions. And just like that, Peach Project no. 2 is in the books.
