@heresyourbite: Chicken Tortilla Soup 🍲🍂 I’ve made a few versions of this soup over the years, but this time I wanted to at least attempt something closer to the real deal. Am I claiming it’s 100% authentic? Absolutely not. But it is delicious. This version is a little more involved, but it’s all for the sake of flavor (and I really do think it’s worth the extra effort). Ingredients below, full recipe in my bio! For the soup: 1 lb boneless skinless chicken thighs (or breasts) Salt and pepper, to taste 4–5 corn tortillas, cut into thin strips (for frying) 1–2 corn tortillas, torn apart (for blending) 1/4 cup avocado or preferred neutral oil (I used @Primal Kitchen Foods avo) 1 white onion, quartered 1 jalapeño, halved lengthwise (remove seeds for less heat) 4–6 cloves garlic, smashed (to taste) 3–4 Roma tomatoes, halved 3 dried guajillo or ancho chiles (stems and seeds removed; just cut the stem off and dump out the seeds into a trashcan) 2 tsp ground cumin 2 tsp Mexican oregano (or regular oregano) 1 tsp chili powder 1 tsp smoked paprika 1 tsp Knorr chicken bouillon powder (optional) 2 bay leaves 6 cups chicken broth (low-sodium) Juice of 1–2 limes, to taste Optional additions: 1 (15 oz) can black beans, drained and rinsed 1–1½ cups corn kernels (fresh, frozen, or canned) For serving: Fried tortilla strips (from step 1) Diced avocado Shredded Monterey Jack cheese (or preferred cheese) Or crumbled queso fresco or cotija / colby jack / etc. Fresh cilantro Lime wedges Sliced jalapeño Mexican crema or sour cream (optional drizzle) #soup #chickentortillasoup #souptok #fall #EasyRecipes should I make a short-cut version?!

There's no such thing as Chicken tortilla soup. There's Sopa de Tortilla and it does not have beans or jalapeño.
