Because we can not hold anyone accountable for bad behavior due to the fact that if we lose them we'll be EVEN MORE short staffed. So we suffer through the bad behavior in order to have any sort of productivity

The industry has always been controlled chaos, we've just been pushed more into the chaos the last few years. It had already started before COVID but that helped accelerate a lot of the issues. Everyone's budget has been destroyed by rising food and labor costs. We were already all running skeleton crews before this compared to what restaurants used to staff. It was enough to make me leave a scratch kitchen I was in charge of, now I make more money passing out food to people at a nursing home.
