@felixens_foodie: Neapolitan pizza tutorial😍 Details down below👇 Mix 300g flour, 150g cold water and 2,5g fresh yeast. Rest 1 hour at room temperature and then 24-48 hours in the fridge❄️ Cut the biga into pieces, can be big or small, and add 700g flour, 365g cold water and 1,2g fresh yeast. First go on low speed for a few minutes then add 220g cold water, 27g salt and 2g olive oil (optional). Then do stretch and fold and pull under tension to create a nice ball, put olive oil so it doesn’t dry or put under a bowl and let it rest for 20 minutes. Then divide into equally sized pieces, roughly 280g and pull under tension, as in the video to form balls. Put them in a container, or box, and let them rest 4-6 hours at room temperature or ideally 24 hours in the fridge. If you put them in the fridge, take them out 2-3 hours before use so they come to room temperature. Write in the comments if you have any questions☺️

I’m doing exactly the same sought without step1, just mixing 200ml cold water with 10 grams of salt, until totally mixed. Then I add 40g of “00” flour, I buy it from local Italian store, made in Napoli. Mix it together with yeast (1-2 grams approx), then add 270 grams of flour. Mix it until perfect consistency, and leave at room temperature for 12-18 hours. Then I preheat my pizza oven to 420° for 30 minutes, and then cook my pizza for 4 minutes. Result is perfect pizza 🥰
