First of all, the word prosciutto means “ham.” Thanks to @altomontes for letting me taste them both 😋 1️⃣ How They’re Made Prosciutto crudo (like Prosciutto di Parma, San Daniele, or Carpegna) is raw but salt-cured and aged for months — no cooking involved. Prosciutto cotto is cooked ham — seasoned, then slowly steam-cooked, similar to Italian-style deli ham. 🕰️ Aging vs. Cooking Crudo: aged for 12–36 months. Cotto: cooked for hours, not aged long. 🍽️ Flavor & Texture Crudo: delicate, nutty, savory, and melts in your mouth. Cotto: mild, tender, slightly sweet, and juicy. 🧂 Ingredients Crudo: just pork leg + sea salt. Cotto: pork leg + salt + natural flavorings (sometimes a touch of wine or herbs). 🇮🇹 Where You’ll Find Them Crudo: antipasto boards, with melon, or on pizza.
