its going to throw the timing off if you do to much we did one and it set correlation codes after .it moves the cams closer to the crank.

Not sure the block is that warped. The straight edge was sat on top of old gasket material and crud, not on the bare deck.

since you got the engine out of the car why don't you just rebuild the whole engine pistons rings cranks main bearings everything why do twice to work. it was up to me I scrapped the engine put in a rebuilt from a crate from the factory.

90% of Engine V-6 / V-8 Blocks with "standalone" cylinder walls that have warped heads, will require block and head resurfacing.

So if you have one side of that V6 mill down, doesn’t the compression on that side of the engine go up which throws the entire engine out of balance?
