Savory Amaranth Porridge Ingredients • 3 cups water • 1 cup raw amaranth • 1 tbsp butter or olive oil • Pinch of salt • Dash of garlic powder (or add herbs, greens, or any protein you like! Method (for both versions) 1. In a medium pot, bring the liquid (water + milk for sweet, or water for savory) to a gentle boil. 2. Stir in the amaranth and a pinch of salt. 3. Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally to prevent sticking. 4. Once the liquid is absorbed and the grains are tender, stir in the remaining ingredients (sweetener and cinnamon for sweet, butter and seasonings for savory). 5. Adjust consistency with a splash of milk or water if you prefer it creamier. Top with toppings and enjoy
