We call them placki ziemniaczane in Polish …. My fave and I make them the exact same way you do . I use a blender too for my onions. Once they are fried, I put some sour cream on top and sprinkle a little bit of sugar.

I use my grandmothers knife to peel potatoes it’s 60 plus years old. I have NEVER used a peeler. It is surprising how many people are triggered by peeling with a knife.
