BROCCOLI & CHEDDAR SOUP✨ I HAD to try making our Girl Dinner Diaries version of @Tini👩🏼‍🍳🔥 broccoli cheddar soup and honestly… she did NOT disappoint 🥹 Creamy, cheesy, loaded with roasted broccoli & garlic, topped with crispy bacon. YES.  Basically everything I want from a cosy bowl of soup. I kept mine chunky-ish because I love having little bits of broccoli throughout, but you can absolutely blend it if that’s your vibe. Whatever you do… don’t skip the crusty sourdough for dipping. 🤌🏼 Ingredients (serves 6-8) •2 large heads broccoli •1 tbsp olive oil •Salt •Black pepper •Pinch of nutmeg •1 whole garlic bulb (2 minis) Soup •6 bacon medallions/slices  •1 tbsp butter •1 onion diced •2 carrots grated/diced •3 tbsp plain flour •300ml whole milk •200ml double cream •650ml chicken stock (stock cubes) •200–225g mature cheddar freshly grated (fresh makes a difference)  • tsp Dijon mustard • tsp paprika • tsp dried thyme 👩🏼‍🍳 1. Preheat your oven to 200°C. 2. Chop the broccoli and place on a baking tray with the whole garlic bulbs. Drizzle with olive oil and season with salt, black pepper and nutmeg. Roast for 20–25 minutes, until tender and slightly charred. 3. Chop your bacon and fry until crispy. Remove some to save for topping. 4. Add the butter, then the onion and carrots. Cook for 5 minutes until softened. 5. Squeeze the roasted garlic from its skin & I used my spoon to break it up abit  6. Stir in the flour and cook for 1–2 minutes. 7. Switch to a whisk & gradually add the milk getting any flour clumps out. 8. Add your double cream and chicken stock stirring as you go, add bit by bit.  9. Add the Dijon, paprika, dried thyme, salt and black pepper (I forgot to film this bit silly me) 10. Add your roasted broccoli & simmer.  11. If you want to blend do it now! 12. Stir through the freshly grated cheddar until melted and creamy. Taste and adjust the seasoning.& add your chopped bacon.  13. Serve with extra cheddar, crispy bacon, fresh chives and plenty of crusty sourdough for dipping.
