technically they all taste the same, but the textures differs. Some hold sauce better, some are better for meat pasta dishes, some are better for fresh tasting pasta dishes, some are better for more heavier pastas. They all have a purpose. You wouldn’t make a pasta dish with a creamy heavy sauce with pasta that doesn’t carry the sauce well where it just all slides off
