This is a simple, flexible minestrone that uses basic ingredients and minimal prep. *Start by heating a little olive oil in a large pot over medium heat. *Add one chopped onion, one chopped carrot(optional). Cook for about five minutes until softened. *Add two cloves of minced garlic and cook for another 30 seconds. *Stir in 2 diced tomatoes, soften for 2 min then add four cups of vegetable or chicken broth ,or simply use 4 cups water and add maggi powder, add one cup of boiled beans or half cup of red lentils and one cup of chopped vegetables whatever you have like zucchini, green beans,potatoes. Bring to a gentle boil, then lower to a simmer and cook for about 15 minutes until the vegetables are tender. *Add small pasta or spaghetti and simmer for another 8 to 10 minutes until the pasta is cooked. *Season with salt, pepper, and a pinch of dried basil or oregano. Finish with a drizzle of olive oil and serve warm.
