@flavourtownbysana: Peshawari Mutton Rosh ✨ Juicy, broth-based mutton dish — basically mutton cooked in its own juices along with a little water and salt, known for its simple ingredients, slow-cooked tenderness, and rich, natural flavor that comes mainly from the meat itself. The word “Rosh” (روش) literally means “juice” or “broth.” It’s called Rosh because the broth (or soup) is the main highlight — flavorful, rich, and made naturally from the slow-cooked meat and bones. To cut down on the cooking time & for ease, i've used a pressure cooker but you can totally cook it low & slow for that perfect rosh! By no means i'm saying that this is the traditional or the authentic way to make it, its just my take on the dish! 🔸1/2 kg bone-in mutton 🔸2-3 fat pieces 🔸Salt- to taste 🔸1 tbsp ginger garlic paste 🔸2-3 medium onion cut in half 🔸3-4 green chillies 🔸3-4 tomatoes roughly cut 🔸7-8 garlic cloves/ 1 whole head of garlic 🔸10-12 black peppercorns 🔸1/2 cup water Add fat pieces to the bottom of the cooking pot & layer all of the above ingredients on top of it, cook/ pressure cooker till the mutton is soft & tender.
