1. Make the Cranberry Gravy
1. In a small saucepan, combine cranberry jelly, Worcestershire sauce, brown sugar, and lemon zest.
2. In a separate bowl, whisk together the gravy mix with water until smooth, then add it to the saucepan.
3. Cook over medium heat, whisking frequently until smooth and thickened (5–7 minutes).
4. Remove from heat and let cool slightly — it should be thick but spreadable.
2. Make the Cornbread Stuffing
1. Preheat oven to 350°F (175°C).
2. In a mixing bowl, combine the cornbread mix, egg, and milk until just blended. Fold in diced onion, sage, and prepared stuffing mix.
3. Spread onto a parchment-lined baking sheet and bake for 12–15 minutes, just until set and lightly golden.
4. Let cool completely, then crumble into small pieces for filling.
3. Assemble the Pinwheels
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Roll out the puff pastry sheets on a lightly floured surface to smooth the seams.
3. Spread a thin layer of cranberry gravy over each sheet (reserve some for dipping).
4. Evenly layer turkey slices, then Brie, and sprinkle the cornbread stuffing over top.
5. Starting from the long edge, roll each sheet tightly into a log.
6. Slice each roll into 8 even pinwheels.
7. Place on the prepared baking sheet, spacing slightly apart. Brush with egg wash.
4. Bake
* Bake for 20–25 minutes, or until golden brown and puffed.
* Let cool slightly before serving.
5. Serve
