@alexismswan: Follicular Phase Lemon Poppyseed Pancakes: 1/3 cup oats 1/3 cup Greek yogurt or cottage cheese 3 eggs 1 tsp baking powder 1 tsp vanilla 1/2 Banana (can omit if you don’t like banana, but it adds a nice sweetness) Optional: 1/2 tsp grated Lemon peel 1 tsp Poppyseeds 1 tbs powdered sugar 1/2 tsp lemon juice Blend banana, oats, yogurt or cottage cheese, eggs, baking powder, vanilla (and optional lemon zest and poppy seed if using) until smooth. Heat a pan over medium heat, and coat pan with butter. When butter is bubbling, pour batter into pan. Let cook for 2 mins per side, or until bubbles form. Flip and cook for another minute or two. Repeat, until all batter is used. Create a stack and top with butter and maple syrup, or if doing optional lemon poppyseed, mix powdered sugar and lemon juice together until smooth and drizzle over top.
