@janklabs: This is a vegetable you probably never heard of before. This is called a sunchoke also known as a Jerusalem artichoke. These are a North American perennial crop, and they are a starchy tuber that grows in the ground. And they will grow prolifically, even in the worst soils they can even be eaten raw and you can do almost anything to them and cook them the same way you would’ve potato. They make a great survival crop.
