I actually don't understand why people consider these so high end, apart from the assembly being a little more complicated, it's just mousse, fancy jam and chocolate. All the pain and effort I go through everytime I make croissants or opera cake on the other hand 💔😭

one girl used to sell $12 for one. she got a bit more popular and immediately raised her prices to $17 (this is within 4 weeks btw). I was like 💀💀 this is greed at this point. she also does plain white cream for all of them. I paid less at Cedric Grolet for some.
