I have Costco and get the same and do the same thing. I buy four or five at a time, my husband helps me debone them all. I put a certain amount in each court size freezer bag to have shredded chicken on hand for whatever meal. And I saved the carcasses skin bones to make broth later.

I just did this and made one chicken meal with mashed potatoes and then a big batch of chicken and dumplings and then a big batch of chicken noodle soup! So good!

I also enjoy making bbq chicken nacho. I do a little cheese, the chicken, red onion and banana peppers over the tortilla chips and throw it in the oven. So quick and easy.
