Cheesy Taco Beef & Rice Skillet Ingredients 2 lbs ground beef 1 medium onion, diced 2 tablespoons chopped garlic 6 tablespoons taco seasoning 1½ cups uncooked medium-grain or sushi rice 2½ cups water 3 teaspoons Better Than Bouillon Beef Base 1 cup Mateo’s Medium Salsa 1½ cups shredded Colby Jack cheese, divided For the Toppings Sliced tamed jalapeños 1 avocado, diced and generously tossed with fresh lemon juice Fresh cilantro, roughly chopped Crema, for drizzling Directions 1. Once the rice is tender, stir in 1 cup of shredded Colby Jack until it’s melted and creamy throughout the beef and rice. 8. Sprinkle the remaining ½ cup Colby Jack over the top. Cover for about 1 minute, just long enough to melt the cheese. 9. Finish with sliced tamed jalapeños, diced avocado drenched in fresh lemon juice, lots of fresh cilantro, and a generous drizzle of crema.
