@supervinobros: We’re continuing our wine-adjacent beverage series with sake 🍶 Sake sits somewhere between wine and beer, it’s brewed like beer but drinks like wine. Instead of grapes, it starts with rice: polished to remove the outer layers, then fermented with koji, a special mold that converts starches into sugars (the same role malt plays in beer). Yeast then takes over, turning those sugars into alcohol. The result is a nuanced drink, typically around 15–20% ABV, that can range from crisp and dry to lush and aromatic. The bottle we’re tasting today comes from Mukai Shuzo in the Kyoto region, where Kuniko Mukai, one of Japan’s most celebrated and forward-thinking brewers, crafts her distinctive red rice sake.
