Crispy Pumpkin Spice Protein Balls🧡 These have about 12 g protein per ball! They are a fun and delicious snack idea for fall!😋 More recipes in my Ebooks that have 265 healthy & easy recipes, link in my profile or go to fitfoodieselma.com🥰 ingredients for 8 servings: 1/3 cup unsweetened pumpkin puree (80 ml) 3 - 4 tablespoons maple syrup, to taste 1/4 cup unsweetened almond/peanut butter (60 ml) 1 teaspoon vanilla paste/extract 1 cup puffed rice/millet/quinoa (240 ml) 3/4 cup vanilla protein powder (180 ml / 90 g / 3 scoops) 1/2 - 3/4 cup almond/oat flour (120 - 180 ml) 2 teaspoons pumpkin spice (or 1 1/2 teaspoons cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, pinch of cloves) toppings: 3 oz. 80% dark chocolate (85 g) 4 tablespoons puffed rice/millet/quinoa 1 teaspoon coconut oil Flaky sea salt 1. Mix the wet ingredients together 2. Add the dry ingredients and stir until combined. Because protein powders absorb liquid differently depending on brand, add flour little at a time, until the mixture is soft and holds together when pressed 3. Roll into 8 balls. Place them onto a plate lined with parchment paper 4. Let set in the freezer for 1 hour 5. Melt the chocolate in the microwave with the coconut oil. Fold in the puffed rice/millet/quinoa 6. Dip the bites in the chocolate and top with flaky sea salt 7. Chill in the fridge until the chocolate is set 8. Store in an air tight container in the fridge or freezer. They last in the fridge for a few days and for about a month in the freezer. If you store them in the freezer, let them defrost for about 10-15 minutes before serving #proteinballs #proteinbites #pumpkinspice #snackidea
