Southern Soul Honey-Glazed Chicken & Sweet Corn RICE-COOKING WITH BRIGHT EYES Ingredients 4 chicken thighs 4 chicken drumsticks 2 cups long-grain white rice 1½ cups sweet corn 3 cups chicken broth ⅓ cup honey ¼ cup soy sauce 2 tbsp olive oil 2 tbsp butter 4 cloves garlic, minced 1 tsp smoked paprika 1 tsp Cajun seasoning ½ tsp onion powder ½ tsp black pepper ½ tsp dried thyme Salt, to taste 2 tbsp fresh parsley, chopped Instructions 1. Preheat oven to 400°F (200°C). 2. Mix honey, soy sauce, 2 cloves garlic, smoked paprika, Cajun seasoning, black pepper, and thyme. 3. Season the chicken with salt and brush generously with the honey mixture. 4. Place chicken in a baking dish and bake for 35–45 minutes, basting with the glaze halfway through, until cooked through and deeply caramelized. 5. Meanwhile, melt butter in a pot over medium heat. Add the remaining garlic and cook for 30 seconds. 6. Add the rice and corn. Stir for 1–2 minutes. 7. Pour in the chicken broth, season with salt and pepper, and bring to a boil. 8. Reduce heat, cover, and simmer for 15–18 minutes, until the rice is tender and the liquid is absorbed. 9. Fluff the rice with a fork and stir in fresh parsley. 10. Serve the glazed chicken over the sweet corn rice, spooning extra pan juices over the top.
