@thegreedymodel: Okay I won't say this is eggs benedict as it cuts a lot of corners. But, if you are really desperate for hollandaise, I feel like this will hit the spot. It's so good, really simple and you can serve with what you like e.g. ham, spinach, smoked salmon, bagels, english muffins - you get the idea. Serves 2 2 heaping tbsp mayonnaise 2 heaping tbsp sour cream Lemon juice 1 knob of butter 1 tsp dijon mustard Salt Smoked paprika Eggs Sausages English muffins (or we used cheese & marmite scones we had leftover - recipe already up!) 1. Get your sausages under the grill. 2. Mix the mayo, sour cream, dijon and paprika in a bowl. Add the juice of half a lemon, stir and taste. It may need more but it's down to personal taste. Then melt down a knob of butter and stir into the sauce. This just adds the butteriness that is typical of hollandaise. I like to warm this sauce slightly over a pan of simmering water as fridge cold is never nice but don't heat aggresively or it will split. 3. Then toast the muffin (we used scones!) and poach the eggs. 4. Then layer up and top with the cheat's hollandaise. YUM!
