INGREDIENTS (for 5 large “diner-style” pancakes) 1 cup (130 g) all-purpose flour 1 tsp (5 g) baking powder ¼ tsp (1 g) baking soda 1 tbsp (15 g) sugar A pinch of salt 1 egg ¾ cup (180 g) buttermilk* 1 tbsp (15 g) neutral oil Optional: a few drops of vanilla extract INSTRUCTIONS – In one bowl, whisk together the dry ingredients. – In another, mix the wet ingredients until smooth. – Pour the wet into the dry and stir gently until just combined. – Cook the pancakes over medium heat, covered, for 2½ minutes per side. – Serve hot with butter squares and a maple syrup flood.
