Beef & Sweet Potato Taco Skillet Ingredients 2 lbs lean ground beef 2-3 sweet potatoes, peeled and diced 1 zucchini, diced 1 yellow onion, diced Minced garlic, to taste 2 cups beef broth  2 tablespoons Worcestershire sauce 2 packets your favorite taco seasoning (I used about: 2 tablespoons chili powder, 1 tablespoon cumin, ½ teaspoon smoked paprika, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1/2 tablespoon steak seasoning, 2 teaspoons kosher salt, and ½ teaspoon black pepper) 2 teaspoons cornstarch 2 teaspoons water Instructions 1. Brown the ground beef in a large skillet over medium-high heat. Add some of the taco seasoning and Worcestershire sauce while the beef is browning. 2. Once the beef is cooked through, remove it from the skillet and set aside, leaving the rendered fat in the pan. 3. Add the diced sweet potatoes, zucchini, and yellow onion to the skillet. Sauté the vegetables in the beef fat until they begin to soften. 4. Add the minced garlic and remaining taco seasoning. Cook until fragrant, about 1 minute. 5. Add the browned beef back to the skillet and stir everything together. 6. Pour in the beef broth and bring to a simmer. Cover and cook until the sweet potatoes are tender, stirring occasionally. 7. In a small bowl, mix 2 teaspoons cornstarch with 2 teaspoons water until smooth. Stir the slurry into the skillet and simmer for a few minutes, until the sauce thickens slightly. 8.
