Introduction
This tutorial provides step-by-step guidance on using a whetstone to sharpen blades (such as kitchen knives, utility knives, etc.). Following these steps will help you achieve a sharp cutting edge safely and effectively.
Preparation
Tools Needed
A whetstone (double-sided is recommended: coarse grit 400-800 for shaping, fine grit 1000-3000 for honing)
A whetstone holder or non-slip mat

Pre-Whetstone Preparation
Soak the whetstone: If using a water stone, submerge it completely in clean water for 10-15 minutes until no more bubbles rise. For oil stones, apply a thin layer of honing oil to the surface.
Secure the whetstone: Place the whetstone on a flat, stable surface. Use a holder or non-slip mat to prevent it from sliding during sharpening.
Clean the blade: Wipe the blade with a cloth to remove any dirt, rust, or debris.
Step-by-Step Sharpening Process
Step 1: Determine the Sharpening Angle
The ideal angle for most kitchen knives is 15-20 degrees. For utility knives or outdoor blades, you can adjust it to 20-25 degrees.
Hold the blade with one hand and place the cutting edge against the whetstone. Tilt the blade to the desired angle and keep it steady.
Step 2: Coarse Grit Sharpening (Shaping)
Start with the coarse grit side of the whetstone (labeled "coarse" or with a lower grit number).
Place the blade at the predetermined angle on the whetstone. Apply light, even pressure with your fingers on the blade.
Sharpen in the forward direction: Slide the blade from the base to the tip along the whetstone in a smooth, continuous motion. Repeat this 10-15 times.
Switch to the reverse side of the blade: Maintain the same angle and repeat the forward sliding motion 10-15 times to ensure both sides of the cutting edge are evenly sharpened.
Check the blade: Look for a consistent burr (a thin metal edge) along the entire length of the cutting edge. This indicates that the coarse grit sharpening is complete.
