What brand ricer do you have? My mom used to have one but the handle bent any time you tried to push potatoes through even when they were fully soft, I think it just wasn’t a great ricer 😅

Air fry those skins, blitz them down and sprinkle on as a topping. Adds more potato flavour without significantly changing the texture
