All you people demonizing Bourdain don’t understand basic food safety. No, you should not get a medium rare burgers at sketchy places. That said, you can eat red meat raw. It is entirely about the food handling. Who ground it, when, and what was the expectation for its use. Great restaurants intending to serve it is medium rare burgers will grind and handle their beef as such.

Bourdain's point isn't that medium-rare burgers are necessarily better, but it should be the customer's choice if they want it. Restaurants that refuse to sell that are either not confident in their beef vendor or afraid of a lawsuit. Plus I can bet the people freaking out over this had food poisoning before, which sucks to have

I agree! My father ran a very successful steakhouse for over 60 years and he said that the moment you ordered it, it was YOUR steak, not his steak, and he would cook it however you wanted it. That’s how you stay in business and successful for 63 years. No temperature shaming. ❤️

If the restaurant refuses its due to a safety related issue. People HAVE died from undercooked burgers. Some restaurants will follow a strict cooking protocol. For your own good.

There are actual guidelines about when a burger can be cooked below medium. If the restaurant doesn’t meet those guidelines, prob not a place you want to eat anyways
