@shawnthefoodsheep: Here’s what it’s like to dine at Houston’s only Mexican restaurant with a Michelin star 🌽✨ For this experience, we weren’t at Tatemó’s restaurant itself — instead, the team hosted a special service at PX Project, a nonprofit empowering youth through culinary training. All proceeds from the dinners that weekend were donated to support their mission. Tatemó is a tasting menu–only, BYOB experience led by Chef Emmanuel Chavez, who built the entire restaurant around nixtamalized corn — the foundation of tortillas and traditional Mexican cuisine. During the pandemic, he dove deep into the roots of Mexican cooking, starting with maize itself. The corn is imported from Mexico, nixtamalized, and ground fresh in-house each day. The tasting menu beautifully reimagines Mexican food through the artistry of masa — from the oceanic brightness of the tuna tostada to the comforting suadero gordita, the earthy huitlacoche quesadilla, and the soulful chileatole with striped bass. The menu evolves constantly based on what local purveyors and farmers find most exceptional. At the end, guests receive a printed menu and Tatemó’s own Houston dining recommendations — a gesture of gratitude from co-founder Megan to the restaurants that once supported them.
