BROWNIE BATTER: 10 tbsp butter 1/2 cup chocolate chips 1 cup sugar 2 eggs 1/8 tsp peppermint extract Pinch salt 1/4 cup cocoa powder 3/4 cup all purpose flour COOKIE DOUGH: 6 tbsp softened butter 1/2 cup white sugar 1/4 cup brown sugar Splash vanilla 1 egg 1/4 tsp baking soda 1/4 tsp salt 1 cup + 1 tbsp all purpose flour 1 cup andes mints, roughly chopped (plus more for topping) . Preheat your oven to 350 degrees Fahrenheit. Line an 8x8 pan with 2 sheets of parchment paper, leaving overhang on each side for easy release of the cake. In a medium bowl add the butter and chocolate chips and melt until smooth. Whisk in the sugar. Mix in eggs one at a time. Add peppermint extract. Fold in salt, cocoa powder, and flour until just smooth. For the cookie dough, in a medium bowl cream together the butter and sugars. Add vanilla and egg. Mix in the baking soda, salt, and flour. Fold in the chopped mints. Add alternating scoops of the brownie batter and cookie dough to the prepared pan. Press more broken andes mints into the surface. Bake for about 25 mins or until the brownie is just baked through and the cookie is golden brown. To finish them off, press -a few- more broken andes mints into the surface after baking, too.
