New York Strip STEAK-COOKING WITH BRIGHT EYES ✅️Ingredients: 2 New York strip steaks (about 1 inch thick) 2 tablespoons olive oil 2 cloves garlic, minced 1 tablespoon fresh rosemary or thyme (optional) Salt and pepper to taste 2 tablespoons butter ✅️Instructions: Prepare the Steaks: Remove the steaks from the fridge about 30 minutes before cooking to allow them to come to room temperature. Pat dry with paper towels, then season generously with salt and pepper on both sides. Sear the Steaks: Heat a cast-iron skillet over medium-high heat. Add the olive oil. Once hot, place the steaks in the skillet and sear for 3-4 minutes per side, or until they develop a beautiful brown crust. Baste with Butter: During the last minute of cooking, add the minced garlic, fresh herbs (if using), and butter to the skillet. Tilt the pan and spoon the melted butter over the steaks for extra flavor. Cook to Desired Doneness: Rare: 125°F (52°C) Medium-rare: 135°F (57°C) Medium: 145°F (63°C) Once the steak reaches your desired doneness, remove it from the pan and let it rest for 5-10 minutes before slicing. ▶️Loaded Shrimp Baked Potato ✅️Ingredients: 4 large russet potatoes 1/2 lb shrimp, peeled and deveined 1 tablespoon olive oil 1 teaspoon Old Bay seasoning (or your favorite seafood seasoning) 1 cup shredded cheddar cheese 1/2 cup sour cream 4 slices bacon, cooked and crumbled 1/4 cup green onions, sliced Salt and pepper to taste 1 tablespoon butter (optional) ✅️Instructions: Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the potatoes clean, poke holes in them with a fork, and place them directly on the oven rack. Bake for 50-60 minutes, or until tender when pierced with a fork. Cook the Shrimp: While the potatoes are baking, toss the shrimp with olive oil and Old Bay seasoning. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes per side, until pink and fully cooked. Set aside. Assemble the Loaded Potatoes: Once the potatoes are done, let them cool slightly before slicing them open. Fluff the inside of the potatoes with a fork and add a little butter if desired. Top each potato with shredded cheese, sour cream, crumbled bacon, green onions, and the cooked shrimp. Season with salt and pepper to taste. Serve: Plate the juicy, rested New York strip steaks alongside the Loaded Shrimp Baked Potatoes for a hearty, satisfying meal. Enjoy 😉
