@fitgreenmind: How to replace an egg?🥚🍳🐣 Finding a substitution is not easy because an egg has many functions, so use these measurements as rule of thumb for cooking and baking: 🌱 For binding and moistening batter (like for pancakes): 1 Tbsp apple sauce = 1 egg 🌱 For the fluff (like this mousse au chocolat): 2 Tbsp Aquafaba = 1 egg white 🌱 For a nice color: 2 Tbsp vegan cream + 1 Tbsp maple syrup = 1 egg (egg wash) 🌱 For egg texture like this omelette: 100g silken tofu + 1 Tbsp chickpea flour = 1 big egg 🌱 For flavor: a small pinch Kala namak = 1 egg Let me know if you want these recipes in detail ☺️ - Wie kann man ein Ei ersetzen? ☺️
Not vegan, not even close, but saved just for in case .. sometimes there are no eggs at home 😁🫶

If it's just about the binding one banana is also a great substitute if you don't mind the taste

This is such a helpful guide! It's great to have so many different substitutions for eggs depending on the dish. I particularly love the tip with silken tofu for an omelette — can't wait to try it. Would definitely be interested in the detailed recipes!

I use chia seeds and/or flax meal for eggs in some baking recipes, too! My preferred is apple sauce for cakes, but chia and flax (linseed) work really well.
