@_jennadenise: Zucchini Ribbon Salad Ingredients • 2 zucchini, sliced thinly into ribbons (I’d normally use a mandoline, but I used a potato peeler here) • 1 shallot, finely chopped • Fresh dill – about 3 tbsp, chopped • Fresh parsley – about 3 tbsp, chopped • Fresh mint – about 1 tbsp, chopped • About 1/8 cup crumbled feta • Juice of 1/2 lemon • Drizzle of olive oil • Salt and pepper, to taste Instructions 1. Add the zucchini ribbons to a bowl with the chopped shallot and herbs. 2. Add the feta, squeeze over the lemon, and drizzle with olive oil. 3. Season with salt and pepper, toss gently, and serve.
