The process starts with glutinous rice that’s steamed, then pounded at high speed using a traditional wooden mallet and stone mortar. Because the mochi is served immediately after pounding, you get it at peak texture. As a mochi connoisseur, I can confidently say these were some of the softest and chewiest I have ever had. You can choose between rich chocolate or smooth matcha, and each one is topped with a perfectly ripe Japanese strawberry. The price is steep at 1000 yen for one mochi, but the taste and the experience make it feel totally justified!
