High fibre 7 seed spinach crackers 🌱 Crunchy, moreish and super seedy: everything you want from a cracker. I added in some nutritional yeast and a bag of baby spinach for a little twist on the viral classic currently doing the rounds. I’ve also seen them made with beetroot 🩷 1. Add a 200g bag of baby spinach to a blender with 125ml water and a cup of nutritional yeast. Blend to a paste. 2. In a medium bowl mix add a cup of mixed seeds (approx 125g) with 1/4 cup (approx 35g) ground flax, 1/4 cup chia seeds, 1/4 cup hemp seeds. Add in the spinach paste, salt, pepper and any dried herbs you want to use (rosemary, tarragon or oregano all work well) and stir to combine. Allow to ‘rest’ for 5 mins. 3. Put oven on to 140 degrees (fan) 4. Lay some baking paper on your counter top. Tip the mixture on top and press down into a thin sheet. If you want to get it nice and even, put another sheet of baking paper over the top and use a rolling pin. Remove the top baking sheet before baking. 5. Bake for 30-45 mins, til golden on top. Be careful not to let it burn. Depending on the thickness of your crackers, you might want to peel the baking paper away from the bottom, flip the crackers over and bake on the other side for maximum crispy crunchiness. 6. When happy, remove from oven. Allow to cool completely and enjoy with your favourite toppings. Will keep in an airtight container for at least 5 days.
