@amyfunderburk: Comfort Crockpot Series Part 4: Garlic Parmesan Chicken & Potatoes 🍽️✨ Servings: 4 Macros Per Serving: 47gP 46gC 20gF Ingredients: ✨2lbs Boneless Skinless Chicken Thighs ✨5 Medium Yukon Gold Potatoes, quartered (you need enough to make 2-3 layers in the crockpot) ✨1tbsp Minced Garlic ✨Olive Oil ✨Salt, Pepper, Italian Seasonings, Garlic Powder, Onion Powder & Poultry Seasoning ✨1/3 Cup Shaved Parmesan Cheese Shaved Parmesan Cheese Directions: ✨Quarter your potatoes & lay them in the crockpot. Drizzle about 2tbsp of olive oil on top (enough to cover the potatoes) and seasoning with salt, pepper, italian seasonings & garlic powder. Add the minced garlic on top. Stir together so the garlic & seasonings evenly coat the potatoes. ✨Grab a pan & warm over medium-low heat. While the pan is warming, season both sides of the chicken thighs with salt, pepper, italian seasoning, garlic powder, onion powder & poultry seasoning. Brown both sides of the chicken thighs (2-3 mins each side). We aren’t fully cooking them here, just getting a nice browning on them. ✨Place the chicken on top of the potatoes in the crockpot. ✨Cover and cook on low for 6-7 hours. ✨Remove the lid & sprinkle with the parmesan!
