Scrub the sweet potatoes clean and pierce each a few times with a fork. Bake the sweet potatoes directly on the oven rack or on a baking sheet lined with foil for 45–55 minutes, or until very tender. Meanwhile, in a skillet over medium heat, melt the butter. Add the diced apples, cinnamon, nutmeg, and a pinch of salt. Sauté the apple mixture for 5–7 minutes, until soft, glossy, and lightly golden. Stir in the maple syrup (or honey), chopped nuts, and dried cranberries. Cook for another 1–2 minutes until warmed through and fragrant. Remove the sweet potatoes from the oven. Slice each open lengthwise and gently fluff the centers with a fork. Spoon the warm apple mixture generously into each sweet potato. Drizzle with extra maple syrup or top with a dollop of Greek yogurt if desired. Notes Use tart apples like Granny Smith or Honeycrisp for balance. Toast the nuts for extra crunch. Bake sweet potatoes ahead of time for easier prep.
