MAPLE BUTTER & SAGE ROAST POTATOES INGREDIENTS 7-9 Yukon gold potatoes 1 tbs salt and pepper 1/2 tbs garlic powder and onion powder 2 tbs dried thyme Infused Butter 1/2 cup vegan butter 1 head of garlic chopped 2 sprigs of sage leaves chopped 1/4 cup maple syrup Salt to taste INSTRUCTIONS Preheat oven to 400°F. Peel and chop your potatoes and boil in salted water for 10-15 mins or until fork tender. Meanwhile fill the bottom of your baking dish with avocado oil, about 1/4-1/2 inch high and place in pre heated oven while potatoes boil. Drain potatoes, season with spice blend and toss in the cooking pot to fluff up the edges but not so much that they fall apart. Transfer to the baking dish with your heated oil and roast for about 1-1.5 hours flipping the potatoes every 20-25 mins. Once roasted and crispy set aside to drain on paper towel lined tray. Add infused butter ingredients to a small saucepan and let cook for about 5 mins on med-low heat. mix to combine and toss with the potatoes.
