@lalarosenyc: Let’s cook our Pernil! (Pork Shoulder) Mine was about 12-14lbs which is on the smaller side so keep that in mind. Bigger ones will need more time to cook. Also, low & slow is always the way! Here’s what I did: 325 covered for 4 hours - you could even go up to 5hrs if you have the time (again bigger cuts, or if you’re cooking multiple at a time, will definitely need more time - I’ve cooked some up to 6 -7 hours) Then either 400-425 uncovered for about an hour or more. Depending on how fast you want it to brown. At this point you’re just looking for it to get nice & brown & crispy but keep an eye out, you don’t want the skin to burn! Once you’ve shredded it all up, if you want the whole skin crispy, put it back in the oven 425-450 until extra crispy. (You can also broil but you really have to be careful because of its high fat content it can burn super fast!)
