Storytime! My class planned the PERFECT senior prank! ✨Recipe: Ingredients: • 2 cups glutinous rice flour • ¼ cup granulated sugar • ¾ cup whole milk • 2 tbsp unsalted butter • ½ tsp salt • 2 tbsp tapioca starch • 1 large egg, beaten • 2 tbsp baking powder Glaze: • 2 cups powdered sugar • 2 tbsp whole milk • Blue food coloring Toppings: • Melted white chocolate • Sprinkles Directions: 1. In a medium saucepan over high heat, combine the milk, butter, salt, and sugar. Heat until the mixture just begins to boil. 2. Reduce the heat to low and add the glutinous rice flour and tapioca starch. Stir until a thick dough forms. 3. Transfer the dough to the bowl of a stand mixer fitted with a dough hook and knead for 2–4 minutes. 4. Add half of the beaten egg and knead until fully incorporated. Add the remaining egg and continue kneading until smooth. 5. Add the baking powder and knead once more until evenly distributed throughout the dough. 6. Divide the dough into small pieces and roll into balls. On small squares of parchment paper, arrange 8 balls in a ring, using a dab of water where they touch to help them stick together. 7. Heat oil to 350°F and carefully fry the donuts for about 1 minute per side, or until lightly golden and puffed. Transfer to a wire rack to cool. 8. In a medium bowl, whisk together the powdered sugar, milk, and blue food coloring until smooth. 9. Dip the cooled donuts into the glaze and allow it to set. For a thicker coating, repeat with a second layer of glaze. 10. Drizzle with melted white chocolate and decorate with sprinkles if desired. 11. Serve and enjoy these chewy, colorful mochi donuts! 🍩✨
