@whatsalfredo: Chocolate cake? Yes, but Sacher Torte! This in my opinion is a “must try” dessert! A rich Austrian classic: dark chocolate sponge, a layer of warm apricot jam, and a chocolate ganache. • 4.5 oz dark chocolate • 1 stick butter • ¾ cup sugar • 5 eggs, separated • ¾ cup flour • ¼ cup powdered sugar • Pinch of salt • 1⅓ cups apricot jam • Ganache: 9.5 oz chocolate + 2–3 tbsp cream Melt chocolate. Cream butter with half the sugar, then add yolks one at a time. Whip egg whites with the remaining sugar and salt to soft peaks. Fold chocolate into the butter mixture, then fold in whites and finally the sifted flour. Bake 35–40 min at 350°F. Cool, slice in half, and fill with warm apricot jam. Brush the outside with more jam, then coat with the thick chocolate ganache. Pure, elegant, old-school Sacher. #Sachertorte #ChocolateCake
