They don't go quiet, just a few octaves lower. In fact on IAE engines (and a lot of others) if its running at close to TOGA then reducing the thrust makes it louder all of a sudden particularly noticeable on A321 takeoffs

That’s when they turned the fuel off at that altitude they don’t run on fuel they run on strictly air!
