Beat until smooth and well blended. Gently fold in the chopped cranberries and parsley to distribute evenly without overmixing. Cover the mixture and refrigerate for 20–30 minutes to firm up for shaping. Use a small scoop or spoon to form 1-inch balls. Roll each portion gently between your hands. In a shallow plate, mix chopped walnuts, extra cranberries, and parsley for the coating. Roll each cheese ball in the coating mixture, pressing gently to help it stick.
