lol glad you caught the cellulite/cellulose slip there! Oyster mushrooms (Pleurotus) are white rot fungi with powerful enzymes that can also break down the lignin that cross links the cellulose. Oysters can also grow on a wide variety of agricultural waste, making them an incredible way to reduce waste while growing delicious nutritious food!

Saw your lobster mushroom video. the hubs was intrigued! The following weekend, we visited our wholesale fishmonger in Moss Landing, CA. it is NOT a fancy-schmancy place - at all. It's a warehouse where the fisherpeople walk around in their boat boots, offloading the days catch from their boats that they drive up in the back. The variety of daily catch is immediately hand trollied to the ice in the front for immediate sale. IMAGINE our surprise last weekend when we walked through the door to see a decent sized bag of fresh clams, fresh caught, just slapped down on the ice halibut, and a crate of locally (that morning) harvested lobster mushrooms. SIGH... with your inspirational recipe posts?After our next stops at a local u-pick farm (located in John Steinbeck territory), and a purchase from a favourite local sourdough baker, we managed to "Pierce Abernathy" an amazing evening, shared with good friends, and a sip or two... or three of great local wine! Thanks for the inspiration Pierce! Can't wait for your book to come out in spring 2026!
