before putting the turkey in, I always turn the fire off and then after the grease settles down you turn the fire back on. that way if any grease drips out and runs down the side of the pot, it won't go into the fire and make a huge explosion

I started deep frying my turkeys about six years ago and I think that is the best way to do it if you do it like this 💯
