Seafood smelling/tasting like ammonia usually indicates with was dead/not fresh when you cooked it. It was starting to decompose. There is a reason why most shellfish is either cooked live or humanely euthanized right before cooking. Conch is amazing, when prepped right. Maybe do some research and try again?

So I’m from the Caribbean and the best way to eat conch is in conch salad(the conch should be fresh and it’s raw in this dish), conch fritters or cracked conch (breaded and fried). ❤️🇹🇨
