@hamishcookstuff: Honeycomb Ingredients 150g sugar 60g honey 1 tbsp water 1 tsp bicarb soda (baking soda) Instructions 1. Line a tray with baking paper and set aside. 2. In a medium saucepan, add the sugar, honey, and water. Do not stir once it starts heating. 3. Heat on medium until the mixture melts and begins to bubble. 4. Continue cooking until it reaches a deep golden amber color (around 150°C / hard-crack stage if using a thermometer). 5. Turn off the heat. 6. Immediately add the bicarb soda and whisk quickly for 2–3 seconds — the mixture will foam up fast. 7. Pour the foaming mixture onto the lined tray. Do not touch or spread it. 8.
